Yuzu

Yuzu (יוזו, Citrus junos) is a citrus fruit that is native to East Asia, particularly Korea and Japan. It is a small, rough, and wrinkled fruit with a tart flavor, often described as a cross between a grapefruit and a lemon. The fruit is typically used in both its zest and juice forms, adding a distinctive aroma and flavor to various dishes and beverages. In Japanese cuisine, yuzu is a key ingredient in ponzu sauce, dressings, and marinades, as well as in traditional sweets and beverages. In Korean cuisine, it is used in various dishes, including 유자차 (yuja-cha), a popular yuzu tea. The fruit is also valued for its essential oils, which are used in perfumes and aromatherapy. Yuzu is often harvested in the winter and is celebrated in Japan during the ゆず湯 (yuzuyu) festival, where it is used in traditional baths for its aromatic properties.
